Moist Banana Bread
- 1 1/2 cups sugar
- 1/2 cup margarine, softened
- 2 eggs
- 1 cup bananas, mashed
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups flour
- 1/2 cup milk
- 1/2 cup chopped walnuts (optional)
Instructions:
Cream sugar and margarine; beat in eggs. Add mashed bananas and vanilla and continue beating until smooth. Mix dry ingredients, and then add, alternating with milk. Fold in nuts. Bake in 9 x 5 inch loaf pan in 350 degree oven for 1 hour (or more, test with toothpick.)
NOTE: This recipe can be doubled, use three pans, and bake about 50 minutes.
