Parmesan-Cornmeal Sticks
Parmesan-Cornmeal Sticks
- 1 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1/3 cup grated Parmesan cheese
- 2 tablespoons sesame seeds, toasted
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/2 cup skim milk
- 1 tablespoon vegetable oil
- Vegetable cooking spray
Instructions:
Combine first 7 ingredients in a large bowl; stir well. Combine milk and oil; add to dry ingredients, stirring just until dry ingredients are moistened.
Turn the dough out onto a lightly floured surface; roll to an 8-inch square. Using a pizza cutter or pastry wheel, cut dough into 4 (4-inch) squares, and cut each square into 8 (1/2-inch-wide) strips. Arrange strips on a baking sheet coated with cooking spray.
Bake at 375 degrees for 20 minutes or until crisp. Let cool completely on a wire rack.
Yield: 8 servings (serving size: 4 sticks).
