Eggnog Quick Bread
Eggnog Quick Bread
- 2 eggs
- 1 cup sugar
- 1 cup fresh (not canned) eggnog
- 1/2 cup margarine or butter, melted
- 2 teaspoons rum extract (or brandy extract)
- 1 teaspoon vanilla
- 2 1/2 cups All Purpose Flour
- 2 teaspoons baking power
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Instructions:
Heat oven to 350F. Grease bottom only of 9x5 inch loaf pan. Beat
eggs in large bowl, add sugar, eggnog, margarine, rum extract and
vanilla. Blend well. Lightly spoon flour into measuring cup and
level off. Add flour, baking powder, salt and nutmeg, stirring just
until dry ingredients are moistened. Pour into greased pan(s), Bake
at 350F for 45 to 50 minutes or until toothpick inserted in center
comes out clean. Cool 10 minutes then remove from pan. Cool
Completely.
Makes 1 loaf.
(This recipe can be baked in 2 - 5 3/4x3
1/4 inch disposable/metal loaf pans, greased on bottom only. Bake at
350 for 35 to 40 minutes).
