Chicken Cacciatore
- 2 whole chicken breasts,halved
- 1 Tablespoon oil
- 1/2 cup chopped onion (1 medium)
- 1 clove garlic
- 4 oz mushrooms or 1 1/4 cup (fresh or canned)
- 1 (14 oz can) stewed tomatoes
- 1/4 cup white cooking wine
- 1/4 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon rosemary
- 1/4 teaspoon pepper
Instructions:
In large skillet over medium-low heat, saute chicken in hot oil until lightly browned; remove and set aside. In same skillet, saute onions and garlic in pan drippings until lightly browned. Stir in mushrooms, tomatoes, wine, rosemary, salt and pepper. Bring to a boil; add chicken. Reduce heat to low, cover and simmer, stirring occasionally, about 1 hour or until chicken is tender
I usually double this recipe, because it is better the next day, and it freezes well.
This is a low fat recipe, but very tasty!
