Lemon Meringue Pie




Instructions:
Put 1 cup sugar into the top of a double boiler. Add boiling water and lemon juice. Blend butter with flour. Combine with lemon mixture and cook in the double boiler until slightly thickened. Stir constantly. Separate the eggs. Add the well-beaten yolks and cook 10 minutes, stirring occasionally. Chill. Prepare single crust and bake according to directions; let cool. Just prior to serving time, pour filling into baked pie shell. Make meringue by beating egg whites until stiff. Add 6 tablespoons sugar and beat to incorporate. Pile the meringue on the pie. Bake at 500 degrees for 3 minutes or less. Watch the meringue closely and remove pie when the meringue is a delicate brown. Allow to cool and then serve.
