Summer Salad
- Mesclun mix (4 small handful)
- Sweet onion (4 thin slices cut into bite sized pieces)
- 1 can mandarin oranges with light syrup
- 1/2 block of blue cheese, crumbled
- 1/4 cup toasted almonds, pine nuts OR sunflower seeds
Dressing:
- 1/3 cup olive oil
- 2/3 cup raspberry vinegar
- 2-3 Tablespoons balsamic vinegar
Instructions:
Pour dressing ingredients into jar and shake.
Layer salad in bowl: mesclun mix, sweet onion, oranges, cheese, nuts.
Drizzle syrup from oranges over salad. When ready to serve,drizzle with dressing .
Any leftover dressing can be kept in the pantry until the next time you make the salad.
