Eating Oatcakes


When I was a boy I had a paper round. I didn't do mornings, too lazy to get up early, but unfortunately I had to do Sunday mornings. When I had finished my round I had a very important job. I had to get the oatcakes for breakfast. You see Sunday was the only day we had a cooked breakfast. I used to get freshly made oatcakes and run to home while they were still warm. My mother would cook bacon and eggs and I would take half an oatcake and roll it around some egg and bacon. (If I was lucky I would get some bacon dip too) We hadn't heard of cholesterol in those days!

Oatcakes themselves are quite healthy and are a good source of fibre. However the foods that go with them are not necessarily so, so be careful. They freeze well and are probably the best microwave food in the world. Simply roll up some grated cheese, cooked bacon, tomato, cooked mushrooms - or in fact anything you like and microwave on full for about a minute each. Some times I make an oatcake sandwich and do the same thing, but that's because I'm greedy and like lots of filling! The children love them too.
