Gourmet dishes don't get much simpler than this one. It is a classic southern Italian dish that
is enjoyed by Italians all over the World. Use the best olive oil than you can get hold of. This sauce must be freshly prepared. |
Cook the pasta in plenty of boiling salted water. A few minutes before the spaghetti become al dente heat the oil in a heavy frying pan (big enough to hold all the spaghetti) and gently fry the garlic until it begins to colour. When ready, drain the spaghetti well and cook for a few minutes with the garlic and oil, stirring continuously. Season to taste.
Transfer to a heated serving dish and toss with the chopped parsley. Serve immediately.
This dish is served without cheese.
Note For a milder garlic flavour, prepare the garlic as in Spaghetti alla Carbonara.
