Garlic & Olive Oil Serves 4-5 as a main course


Gourmet dishes don't get much simpler than this one. It is a classic southern Italian dish that is enjoyed by Italians all over the World. Use the best olive oil than you can get hold of.
This sauce must be freshly prepared.


METHOD

Cook the pasta in plenty of boiling salted water. A few minutes before the spaghetti become al dente heat the oil in a heavy frying pan (big enough to hold all the spaghetti) and gently fry the garlic until it begins to colour. When ready, drain the spaghetti well and cook for a few minutes with the garlic and oil, stirring continuously. Season to taste.

Transfer to a heated serving dish and toss with the chopped parsley. Serve immediately.

This dish is served without cheese.

Note For a milder garlic flavour, prepare the garlic as in Spaghetti alla Carbonara.
