|Straw & Hay with Peas & Ham||Serves 4-5 as a main course|
Whilst this dish has always been a personal favorite, for some bizarre reason the words Peas & Ham
seem to conjure up all manner of horrors to many people. However, once tasted, forever addicted.
Make it, serve it and tell them the name afterwards.|
This sauce does not keep well.
Heat the buttter in a pan and gently fry the finely chopped shallots or onion until soft and translucent, about 3-4 minutes. Add the peas and cream and cook until the peas are just tender.
Meanwhile cook the pasta in plenty of boiling salted water until al dente. When the pasta is almost ready reheat the sauce, add the shredded ham and heat through. Season to taste. Drain the pasta and transfer to a heated serving dish. Mix with the sauce and half of the parmesan cheese. Serve immediately with the rest of the cheese.
