GARLIC MEAT LOAF WITH ROASTED GARLIC POTATOES
This one is for the garlic lovers.
(Serves 6)
Ingredients:
  • 1 cup thick pasta sauce
  • 1-1/2 pounds ground beef
  • 1 cup fresh bread crumbs or 1/2 cup can bread crumbs
  • 1 egg beaten
  • 1 tablespoon Worcestershire sauce, (optional)
  • 8 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 5 medium potatoes, cut into quarters
Directions:
Mix 1/2 cup pasta sauce, beef, bread crumbs, egg, Worcestershire sauce and 4 cloves of garlic thoroughly. Shape mixture firmly into a 8" X 4" loaf. Place in the middle of a 13" X 9" X 2" baking dish. Pour 1/2 cup of pasta sauce on top of meatloaf. Mix oil and remaining garlic. Toss potatoes with oil mixture until evenly coated. Sprinkle with paprika. Place potatoes around meatloaf. Bake at 350 degrees for one hour or until meatloaf is no longer pink. (160 F.)
(I rub a thin coating of oil over the whole baking dish before I put anything in it.)
