SAVORY MEAT LOAF WITH OVEN ROASTED POTATOES |

This is my daughter's favorite meat loaf. Just make a salad and you have your whole meal. |
|

|
(Serves 6) |
|
|
|
Ingredients: |
|
|
|
- 1 can 10 3/4 ounces condensed tomato soup
- 1-1/2 pounds ground beef
- 1 can (2.8 ounces) french fried onions
- 1 egg, beaten
- 1 tablespoon Worcestershire sauce, (optional)
- 5 medium potatoes, cut in quarters
- 2 tablespoons vegetable oil

Directions: |

|
Mix 1/2 cup soup, beef, 1/2 can onions, egg and Worcestershire sauce thoroughly. Firmly shape mixture into a 8" X 4" sixe. Place in the middle of a 13" X 9" X 2" baking dish. Spoon remaining soup over meat loaf. Toss potatoes in oil and sprinkle with paprika. Arrange potatoes around meat loaf. Bake at 400 degrees for 1 hour or until meat loaf is no longer pink. (160 F.) |
