MEAT LOAF STUFFED WITH MOZZARELLA CHEESE |

My husband came up with the idea of rolling the mozzarella cheese in the ground beef jelly roll style. |
|

|
(Serves 6) |
|
|
|
Ingredients: |
|
|
|
- 1-1/2 pounds ground beef
- 1 egg, beaten
- 2 cloves garlic, minced
- 1/4 cup chopped scallion
- 1/2 cup bread crumbs
- 1 tablespoon Worcestershire sauce, optional
- 2 tablespoons ketchup (or pasta sauce)
- 8 ounces mozzarella cheese, thinly sliced

Directions: |

|
Mix beef, garlic, onions, bread crumbs, egg, ketchup and Worcestershire sauce thoroughly in a big bowl. Flatten meat on a long sheet of wax paper. Make sure you cover the width of the wax paper with meat. This will be the size of your meatloaf. Lay slices of mozzarella cheese on top of beef mixture. Leave one inch on all four sides without cheese. Take the end of the wax paper and roll the meat (jelly roll style.) Tuck both ends under. Smooth meat so you don't see any cheese. If you did this right none of the mozzarella cheese should ooze out while baking. Bake at 350 degrees for one hour or until meat loaf is no longer pink (160 F.) (I check it with a meat thermometer.) |
