CHICKEN WITH CHEESE AND MACARONI
(Another recipe that's great for leftover chicken.)
(Serves 4)
Ingredients:
  • 1-1/2 cup elbow macaroni (uncooked)
  • 2 cans cream of chicken soup
  • 1 cup milk
  • 1-1/2 cups shredded ceddar cheese
  • 1-1/2 cups cooked chicken
  • 1/8 teaspoon pepper
  • 1/4 cup scallions, chopped
Directions:
Cook macaroni according to package. Drain. In a saucepan over low heat mix soup, pepper, onion, milk and ceddar cheese. Stir constantly. When the cheese is melted add chicken. Remove from heat and add macaroni. With a spatula transfer to a 2 quart casserole dish. Bake at 350 degrees for 50 minutes or until bubbly.
Great with a salad!
