SCALLOPED POTATOES AND HAM |
|

(Great for leftover ham.) |
|
|
|
(Serves 4) |
|
|
|
Ingredients: |
|
|
|
- 1 stick butter
- 1/2 cup flour
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 cups milk
- 3 cups cooked ham
- 1/4 cup scallions, chopped
- 1/2 cup shredded cheddar cheese
- 5 cups potatoes, sliced thin

Directions: |

Preheat oven to 350 degrees. Melt butter in large saucepan over low heat. Stir in flour, salt and pepper. Cook for about a minute. Gradually stir in milk, stirring constantly. Cook mixture until it starts to boil. Then fold in ham, scallion and cheese. Grease a 13" X 9" X2" baking dish with margarine. Put sliced potatoes in a large bowl. Pour ham mixture over potatoes. Stir gently and then move all this into the baking dish. Cover with aluminum foil. Bake for 30 minutes. Uncover and bake an additional hour. |
