PORCUPINE MEATBALLS IN THE CROCKPOT |

(Great with a salad and some garlic bread!) |

(Serves 4) |
|
|
|
Ingredients: |
|
|
|
- 1 1/2 pounds lean ground beef
- 1/2 cup raw rice
- 1/2 cup scallions, chopped
- 1/2 cup green pepper, finely chopped
- 1 egg
- 1/4 teaspoon pepper
- 2 cans (10 1/2 ounces) tomato soup (Can substitute this with thick pasta sauce)

Directions: |

In mixing bowl combine ground beef, rice, scallion, green pepper, pepper. Shape meat mixture into 24 meatballs, about 1 1/2 inches in diameter. Place meatballs in crockpot. Pour soup over meatballs. Cover and cook on low setting for 7 to 8 hours. |

|
Any leftover can be microwaved the next day! You could get creative and use salsa instead of soup or sauce. |
