PORCUPINE MEATBALLS IN THE CROCKPOT
(Great with a salad and some garlic bread!)
(Serves 4)
Ingredients:
  • 1 1/2 pounds lean ground beef
  • 1/2 cup raw rice
  • 1/2 cup scallions, chopped
  • 1/2 cup green pepper, finely chopped
  • 1 egg
  • 1/4 teaspoon pepper
  • 2 cans (10 1/2 ounces) tomato soup (Can substitute this with thick pasta sauce)
Directions:
In mixing bowl combine ground beef, rice, scallion, green pepper, pepper. Shape meat mixture into 24 meatballs, about 1 1/2 inches in diameter. Place meatballs in crockpot. Pour soup over meatballs. Cover and cook on low setting for 7 to 8 hours.
Any leftover can be microwaved the next day! You could get creative and use salsa instead of soup or sauce.
