Lentil Soup
This is a hearty, energizing soup.
Ingredients:
  • 28 ounces crushed tomatoes
  • 48 ounces chicken broth, (can or homemade)
  • 16 ounces water
  • 1 1/2 cups lentils (12 ounces)
  • 1 pound carrots, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon basil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • pepper to taste
Directions:
Heat the oil in a large pot over medium heat. Saute the onions and garlic. Add the crushed tomatoes, water and chicken broth. Then add basil, thyme, oregano, salt, pepper, carrots and lentils. Bring to a boil. Reduce heat and simmer, covered for 2 hours.
