Lentil Soup |

This is a hearty, energizing soup. |

Ingredients: |

- 28 ounces crushed tomatoes
- 48 ounces chicken broth, (can or homemade)
- 16 ounces water
- 1 1/2 cups lentils (12 ounces)
- 1 pound carrots, sliced
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- 1 teaspoon basil
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- pepper to taste

Directions: |

Heat the oil in a large pot over medium heat. Saute the onions and garlic. Add the crushed tomatoes, water and chicken broth. Then add basil, thyme, oregano, salt, pepper, carrots and lentils. Bring to a boil. Reduce heat and simmer, covered for 2 hours. |
