STEWED GREEN BEANS |

(Serves 4 as a main dish, 8 as a side dish) |
|
|
|
(This dish is perfect for vegertarians. Can be served over rice, pasta or whatever you choose. Or you could use it as a side dish. You can make this very mild, spicy or hot depending on how much spices you use.) |

Ingredients: |
|
|
|
- 2 pounds fresh green beans
- 2 cans stewed tomatoes (each 14.5 ounces)
- 3 tablespoons olive oil
- 8 cloves garlic, chopped
- 2 medium oinion, chopped
- 16 ounces chicken broth (homemade or can)
- 1 teaspoon italian seasoning
- pepper to taste
- 2 teaspoons tomato paste
- 1 teaspoon cayenne pepper (can be omitted)
- 1 teaspoon chili powder (can be omitted)
- 1 teaspoon cumin (can be omitted)

Directions: |

Heat the olive oil in a large skillet over medium heat. Saute the onions and garlic. Add the stewed tomatoes, italian seasonings and pepper. Simmer covered for a few minutes. Then stir in cayenne pepper, cumin and chili powder. Add chicken broth and green beans. Simmer covered on a low flame for an hour, stirring it occasionally. At the end put in tomato paste to thicken sauce. (To do this take some of the liquid out and mix with the tomato paste. Then pour back in and mix.) Simmer a few more minutes and it's ready. |

You can use more or less of cayenne, chili powder and cumin, depending how hot you want it. If you use the measurements that I gave it will be hot. |
