Apricot Chicken

Chicken thighs, skinned
1 pound mushrooms, cleaned, sliced vertically
1 large onion, cut into large chunks 
2 large carrots, sliced 
1 celery rib (with leaves), sliced 
Dried apricots 
1 pkg. Onion Soup 
Apricot juice, to cover

Place chicken pieces on bottom of crock pot. Sprinkle with the
dried onion soup. Cover chicken with the apricot juice. Place 
veggies on top. Cook on low setting for for 6 to 7 hours.
