Cold Chicken Salad

Serves 2

1/2  pound grilled chicken breast
1 cup chopped black olives
1 cup chopped green grapes
2 chopped hardboiled eggs
1/2 cup shredded low-fat Monterey Jack cheese
1/2 cup chopped celery
1/4 cup cherry tomatoes
1/4 cup slivered almonds
4 cups mixed salad greens
1/4 cup balsamic vinegar
2 Tbs. Low-fat/Non-fat Mayonnaise

Grill chicken breast and slice into small strips. Refrigerate.
In a large bowl, mix all other ingredients well.  Add chilled 
chicken and serve cold.
