Tofu, Tomato, and Basil Salad

Simple, delicious and a beautiful presentation. A takeoff on the classic Mozzarella, Tomato, and Basil salad.

Make a bed of fresh greens, like arugala or watercress.  Slice
the tofu into 1/4-inch slices.  Slice one or two tomatoes.  Wash
some fresh basil.  Place on top of the bed of lettuce in a circular
pattern:  tofu, tomato and basil.

Serve with one of the following sauces/dressings:  tamari, soy sauce
or wasabi, or mix together tamari (soy sauce), fresh lemon juice, and
a small amount of sweet vinegar (rice vinegar).  Chop up tomatoes. 
alfalfa or sunflower sprouts and arrange in the center.
