Kefir Cheese Recipes
Making kefir cheese

Take your prepared kefir and allow to sit at room temperature until fully separated into curds and whey.  Line a strainer with cheesecloth or a flour sack towel, place the strainer in a bowl, and let drain overnight.  Save the whey for other uses.  The kefir cheese will be left in the towel.
Spinach Dip


2 cups kefir cheese
1 10 oz pkg frozen chopped spinach,
    thawed and water squeezed out
1 clove garlic, chopped
1 small onion, finely chopped
1 t. dried thyme
2 t. tamari or soy sauce
1 t. celtic sea salt
Pinch black pepper

Combine all ingredients in bowl. Thin with milk if needed.
Spicy Southwestern Dip

2 cups kefir cheese
2 garlic cloves, chopped
½ cup finely chopped onion
1 T. chili powder
2 t. fajita seasoning
1 t. chipotle or cayenne pepper
2 t. lime juice
1 t. salt


Combine all ingredients in bowl. Thin with milk if needed.
Smoked Salmon Dip

2 cups kefir cheese
4 oz smoked salmon, finely chopped
2 t. prepared horseradish
2 t. dillweed
1 t. lemon juice
1 t. salt

Combine all ingredients in bowl. Thin with milk if needed.
Strawberry Cheese Spread

2 cups kefir cheese
8 oz frozen strawberries, thawed and drained
1 t. vanilla
1/3 cup raw honey or maple syrup

Put all ingredients in food processor and blend until smooth.
Soft-serve Sweet Kefir Cheese

2 cups cups kefir cheese
2 T. maple syrup
1 t. vanilla

Put all ingredients in mixer or food processor or mixer and blend until smooth.
Banana Pudding

1 1/2 cups cups kefir cheese
2 ripe bananas
2 T. orange juice
2 T. honey
1 t. vanilla

Put all ingredients in mixer or food processor or mixer and blend until smooth.
