Banana Pancakes
Dry Ingredients:
250ml (1 cup) all-purpose flour
10ml (2 tsp.) granulated sugar
10ml (2 tsp.) baking powder
2ml (1/2 tsp.) salt

Liquid Ingredients:
1 egg
75ml (1/3 cup) mashed ripe banana~ about 1 small banana
30ml (2 tbsp.) cooking oil
175ml (3/4 cup) milk

Thoroughly mix Dry Ingredients in a medium bowl. Make a small “well” in the center
Beat the Liquid Ingredients in a small bowl. Pour into “well” and stir until moistened
Pour about 60ml of the mixture into a fry pan for each pancake. When the edges start to dry and bubbles appear on the surface, flip the pancake over. Cook until golden.
Serve with syrup, icing sugar and/or fruit.
