Gillespie Serving Size : 50 Preparation Time :0:00 Categories : Toronto Star Fare Exchange Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------- 2 cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon ground allspice 1/4 teaspoon salt 1/2 cup vegetable shortening 1 cup granulated sugar 1 large egg 1/2 teaspoon vanilla extract 1 tablespoon grated lemon zest 1 cup mashed cooked carrots -- (2 to 3 carrots) 1. Preheat oven to 350° F. Lightly grease 2 baking sheets. 2. Combine flour, baking powder, spices and salt. 3. In a large bowl, cream the vegetable shortening and sugar. Beat in the egg and vanilla extract. Beat in the lemon zest. Beat in the Carrots. Gradually blend in the dry ingredients. 4. Drop by spoonfuls 1 1/2" apart onto the prepared baking sheets. 5. Bake for 12 to 15 minutes, until golden brown. Cool on the baking sheets on wire racks.
