* Exported from MasterCook * Jumbo_Raisin_Cookies Recipe By :Jeannette Field Serving Size : 77 Preparation Time :0:00 Categories : Regular Sweet Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------- Cream Mix: 2 cups raisins 1 cup water 1 cup margarine -- or butter 1 1/2 cups sugar 2 eggs -- well beaten 1 teaspoon vanilla 2 tablespoons milk Dry Mix: 4 cups flour 2 teaspoons salt 1 cup rolled oats -- (not instant or quick!!) 1 teaspoon baking powder 1 teaspoon baking soda 1 1/2 teaspoons cinnamon 1/2 teaspoon nutmeg 1 1/2 teaspoons cloves 1 1/2 teaspoons allspice 1/2 teaspoon ginger -- (optional) 1) Put raisins and water into a sauce pan, and let simmer to plump them. Cool. 2) Preheat the oven to 400 deg. 3) Cream the next 5 ingredients in the Cream Mix. Stir in the cooled raisins and the water. 4) In a separate bowl, mix all the ingredients for the Dry Mix. 5) Gradually add the Dry Mix to the Cream Mix. You will have to stir with a wooden spoon as it gets very thick. 6) Make tablespoon-sized globs of dough and placed on greased/parchement papered cookie sheets. 7) Bake for 10-12 minutes and feed promptly to your family.
