                     Kaab El Ghzal (gazelle's Horns)

  Amount  Measure       Ingredient -- Preparation Method

                        Using a wire whisk, stir together
                        thoroughly:
  2               cups  all purpose flour
     1/8      teaspoon  salt
                        Stir in until a rough dough is formed:
  3        tablespoons  olive oil -- or Canola oil
     1/4           cup  orange juice -- or orange flower water
     1/2           cup  water
                        Knead for 5 minutes, or until smooth and
                        elastic. Wrap in plastic and chill for at
                        least 1 hour. Blend:
  1 1/3           cups  almonds -- finely ground
     1/2           cup  sugar
     1/2      teaspoon  cinnamon
  1         tablespoon  grated orange zest
                        Stir in:
  2        tablespoons  orange juice -- or orange flower water (2 -3 tbs)
                        Knead gently until a smooth paste is
                        formed.
                        To bake: Preheat oven to 350°.
                        On a very lightly floured surface, roll
                        the dough into a 16 x 18" rectangle. Cut
                        into 6 strips, 3 inches wide by 16 inches
                        long. Shape 1 1/2 tsps of almond mixture
                        into logs 1 1/2 inches long. Evenly space
                        5 logs, end to end, along each strip of
                        dough.
                        Brush the dough lightly with water, then
                        fold over the almond logs, and press
                        gently to seal. Use a pastry wheel to cut
                        the half moon shapes around the logs,
                        beginning and ending at the folded edge.
                        Gently bend each cookie into a crescent
                        shape and prick the top with a fork.
                        Bake for 20 to 25 minutes, until very
                        lightly coloured. Transfer sheets to wire
                        racks and let cookies firm up slightly.
                        Then, transfer cookies to wire racks to
                        cool thoroughly. When cool, sift over the
                        cookies:
     1/2           cup  powdered (confectioner's) sugar
                        Store, airtight, for 2 to 3 days, or
                        freeze up to 3 weeks.
