Preheat oven to 425 deg. 2. Beat egg in bowl if using real egg. If not, ignore this step. 3. Place chopped onion and egg (substitute) in a bowl and add the meats. Mix with hands (you'll get a better consistency). 4. Cover a roasting rack with aluminum foil (slice slits into the foil to drain the fat below), and spray with nonstick cooking spray. 5. Shape into a flat-ish mound on the rack and cover it with foil. Bake in oven for 45 min. 6. After 45 minutes, uncover the meatloaf and let bake until brown, or switch to the "broil" setting and broil until lightly crispy.
