* Exported from MasterCook * Lowfat_Cranberry_Cake Recipe By :Jeannette Field Serving Size : 12 Preparation Time :0:00 Categories : Lowfat, Low Calorie Sweet Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------- 2 1/2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 1/4 teaspoon ground nutmeg 2 eggs 1/2 cup granulated sugar 1/3 cup corn syrup 1 cup unsweetened applesauce 1 grated orange peel 1 orange, juiced 1 can cranberry sauce -- whole berry 1 cup raisins icing sugar 1. In medium bowl, combine flour, baking powder, baking soda, cinnamon, salt and nutmeg. In large bowl, lightly beat eggs. 2. One at a time, stir in until blended: sugar, corn syrup, apple sauce, orange rind and juice. 3. Stir cranberry sauce with a fork until softened; stir into egg mixture. 4. Fold in flour mixture and raisins just until moistened. Do not ovemix. 5. Spoon into lightly greased 13 x 9- inch (3.5 L) baking pan. Bake in 350° F (180°C) oven 40 to 45 minutes or until toothpick comes out clean. Cool on wire rack.
