     1/4           cup  rinsed canned chickpeas
     1/4           cup  natural peanut butter
  2        tablespoons  unsalted butter -- softened
     1/2           cup  packed dark brown sugar
  1              large  egg
  2        tablespoons  dark corn syrup
  2          teaspoons  vanilla extract
     1/8      teaspoon  peanut butter extract
  1 1/3           cups  all-purpose flour
     1/4      teaspoon  baking powder
     1/4      teaspoon  baking soda
     1/4      teaspoon  salt
     1/4           cup  sugar
  30                    milk chocolate kisses

1. Combine the chickpeas, peanut butter, and butter in a food processor;
pulse several times until very smooth. Add the brown sugar, egg, com
syrup, vanilla, and peanut butter extract; pulse several times until
smooth. 

2. Whisk together the flour, baking powder, baking soda, and salt in a
medium bowl; add to the food processor and process againjust until well
incorporated. Transfer the dough to the empty flour bowl, cover, and chill
until firm, about 2 hours. 

3. Preheat the oven to 375°F. Spray 2 baking sheets with nonstick spray.

4. Spread the sugar on a work surface. Shape the chilled dough into 30
(1-inch) balls, then roll each in the sugar. Arrange 2 inches apart on the
baking sheets, placing a kiss in the center of each dough ball to flatten
it slightly. Bake until firm, with the edges just beginning to color,
about 10 minutes. Cool completely on a rack.

NOTES : A low-fat, crumbly, yummy peanut butter cookie? It is
        possible--thanks to a little ingenuity, and a few chickpeas. Best
        of all, these easy, homemade treats can be made from start to
        finish in the food processor. Bake them up when you need to bring
        something to a party. They'll last about a week in an airtight
        container, or up to a month in the freezer.
