                               Spanish_Rice

  Amount  Measure       Ingredient -- Preparation Method

  1                cup  rice -- (or more)
  1                can  tomato paste -- (medium)
                        salt -- to taste
  1                     onion -- medium, chopped
  1              stalk  celery -- chopped (1 to 2)
  1                     green pepper -- chopped
                        ground beef -- any amount
     1/4           cup  cooking oil

1. Heat the oil in an iron skillet or dutch oven and brown the onion.

2. Add the rice to the skillet and stir until well mixed with oil and onion.

3. Add a cup of water to the mixture, followed by the tomato paste, celery, and pepper. 

4. Stir until mixed well, cover and simmer.

5. Periodically stir the mixture, adding more water to keep the rice from sticking (good luck!). Stir well.

6. When the rice is tender, add the ground meat, stirring well into rice mixture.

7. Cover and cook until the meat is done.

Description:
  "This was my Dad's recipe. He used to make it when he took his Boy
  Scout troop on campouts. My brother, sister, and I loved it too, and
  would frequently request it."

NOTES :  I like to brown the meat first, because sometimes the meat doesn't cook all the way. Your choice, I wrote it as given to me by Dad. It's the basis for my Chili recipe.
