CUB COOKING What are your plans for this 4th of July? Where ever you are, where ever you're going, these cookies will travel well and show your pride in the Good Ole USA. Why not bake up a few? RED, WHITE & BLUE COOKIES 1 cup margarine 1 egg white - whipped 2 teaspoons vanilla extract 2 1/2 cups unbleached flour 1 1/2 cups sugar 1 1/2 teaspoons baking powder 1 teaspoon red food coloring 1 teaspoon blue food coloring Preheat oven to 350. In a mixing bowl combine margarine, whipped egg white and vanilla extract. In a seperate bowl combine flour, sugar and baking powder. Mix wet ingredients with dry until just moistened. Divide dough into 3 equal parts. Tint 1 portion with the red food coloring. Mix 1 portion with the blue food coloring. Make sure the color is mixed through-out. Form each portion into large, long bars and stack bars on top of each other in red, white and blue order. Wrap cookie dough in waxed paper and refrigerate for 1 hour. Cut slices into 1/4 inch thick bars. Place on greased baking sheet and bake for 10 - 12 minutes. Let cool and Enjoy! |
