Rosemary Chicken on skewers
Serving: 4
2 Chicken boneless  skinless Breast cut into approx 1 inch cubes        
1  Bell pepper, red or green, cut into approx 1 inch cubes      1 small onion cut into approx 1 inch cubes             2 Tbls fresh  Rosemary or 1 tbls of dry rosemary                 Pepper to taste                                                    Crush Pepper flakes to taste                                               1 tsp water

In a plastic bag combine rosemary, pepper, crush pepper flake  and water. Place chicken in bag and refrigerate for a couple of hours.  Thread the  1/4 of chicken, onion and bellpepper on one of the skewer. Repeat  for the other three. Cook on grill or in the oven  about 15- 20 minutes until chicken is done.

Grilled Snapper
Serving :4
2   Snapper, Gutted and head off
1/2 c fresh basil
1/2 c chives
2 tbls fresh rosemary
1 red onion, sliced thin rounds
1 green bell pepper, sliced in thin rounds
crushed pepper flakes, optional
In a plastic container, place the fish . In the cavity of the fish  place some of the fresh herbs. Sprinkle the rest on
each side of the fish. Place the onions and bell pepper on top of fish .  Seal and place in refrigerator until  you are
ready to cook. Place fish in a fish wire holder , put some of the onion and bell pepper on each side of the fish
before closing basket. Grill until fish is done.

Egg White Spinach Omelette
Serving : 1
2 large egg whites
2 tbls water
pepper to taste
Fresh spinach
garlic
2 green onions, chopped
Pam spray

Whisk the egg whites and water together until frothy. In a small non stick frying pan, add 1/4 c water. Add the
green onions and spinach until it is wilted. Drain on paper towel. Wipe out pan. Spray lightly witn Pam. Add egg whites. Cook on meduim heat . Add the Spinach and onion. Cook until firm. Then fold and flip on oher side.Cook until done
Baked Sweet Potato
Serving:2
1 Meduim sweet potato
Cinnamon
1 pkg sweet n low or equal

I like to bake my sweet potato wrapped in tin foil in the oven for 30 min or unitl soft. I think it make it sweeter. You can freeze them.
