My Mother's Pumpkin Scones

2 tbsp butter
2 tbsp sugar
1/2 tsp grated lemon rind
1 cup cooked mashed pumpkin
1 egg
2 & 1/2 cups self-raising flour
pinch salt
1/2 tsp nutmeg
1/2 tsp mixed spice
1/2 cup milk

Cream butter and sugar. Add lemon rind and beat well. Add egg. Mix roughly, fold in sifted dry ingredients alternately with milk to form a soft dough.

Bake in a moderate oven about 15 minutes.
