STRAWBERRY MOUSSE

 

1 punnet strawberries
225g carrton non-fat natural yoghurt
1/4 cup skim milk
1 tbsp sugar
2 &1/2 teaspoons gelatine
1 tbsp water
3 egg whites.

wash and hull strawberries - saving 4 for decoration
pit in blender with yoghurt, milk, and suger, blend till smooth.  sprinkle
gelatine over water;  disolve over hot water;  cool.  add to strawberrry
mixture;  mix well.  fold in softly beaten egg whites.  pour mixture into
large souffle dish or 4 small indiviidual dishes;  refrigerate till set.
serve topped with a little yoghurt and a reserved whole strawberry.  serves
4.
