Carrot Cake

1 cup flour
3/4 cup sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 1/2 cups shredded carrots
1/2 cup oil
2 eggs
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Grease and flour 8 inch pan. Combine first 6 ingredients. Add next 3. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Add raisins and/or nuts if desired. Mix into batter. Turn into pan. Top with cream cheese frosting that follows.


Cream Cheese Frosting:


1 1/2 ounces cream cheese, softened
1/2 tsp. vanilla
2 Tbsps. butter
1 cup confectioners sugar

Beat together cream cheese and butter. Add vanilla and beat until light and fluffy. Gradually add sugar until smooth. Frost Carrot Cake.

Lazy Summer Sponge Cake

1 cup milk, scalded
1/4 cup butter
4 eggs
1 3/4 cups sugar
1 tsp. vanilla
1 3/4 cups flour
1 Tbsp. baking powder
1/2 tsp. salt

Add butter to milk; set aside. Combine eggs, sugar and vanilla. Beat for
1 1/2 minutes at high speed until thick and lemon colored. Add dry ingredients. Beat for 1 minute at low speed. Add milk mixture; beat for 1 minute. Bake for 30-35 minutes in a greased 13 X 9 inch pan in a
350 degree oven. Cool slightly. Spread topping (follows) on cake after cool.


Topping:


1/2 cup cream
1 cup flaked coconut
2/3 cup brown sugar
1/2 c. chopped nuts

Combine cream and brown sugar in small pan. Bring to boil over medium heat and cook for 3 minutes. Stir in coconut and nuts. Spread over cake.

Noodle Pudding

1 (1 1/2 lb.) pkg. medium noodles
1/2 cup sugar
3 Tbsps. butter
1 - 8 ounce carton (1 cup) sour cream
1 - 8 ounce carton (1cup) cottage cheese
1 1/2 cups milk
4 eggs
1 tsp. salt
1 tsp. vanilla

Topping

3 Tbsps. butter
1/4 cup sugar
1/4 cup corn flakes (or other flake cereal-Special K is good)
1/8 tsp. cinnamon

Cook and drain noodles. Put in large bowl; add sugar, butter, sour cream, cottage cheese and milk. Beat eggs and add to mixture with vanilla and salt. Mix well and put into greased pan or baking dish.

Topping:

Combine ingredients. Sprinkle over the top of noodle mixture. Bake at 350 degrees for 1 hour.
Butterscotch Bread Pudding

3 cups bread cubes (4 for a firmer pudding)
2 cups milk, scalded with 1/4 cup butter
1/2 cup light brown sugar, packed
2 eggs, beaten slightly
1 tsp. cinnamon
1/2 cup raisins (optional)

Combine bread cubes and raisins in a greased baking dish. Combine milk, sugar, eggs and cinnamon and pour this mixture over the bread cubes.
Place dish in a pan of hot water. Bake at 350 degrees for 40-45 minutes.

Apple Crisp

4 cups sliced apples
1 tsp. cinnamon
1 tsp. salt
1/4 cup water


Crumb Topping


3/4 cup flour
1 cup sugar
1/3 cup butter, softened

Combine these ingredients.

Combine apples, cinnamon, salt and water. Place in a buttered 10" x 6" x 2" baking dish.
Top with crumb mixture.
Bake at 350 degrees for 40 minutes.
