Tuna Loaf with Creamy Egg Sauce
Tuna Loaf: 1 (12 1/2 or 13 ounce) can tuna, drained 3 cups soft bread crumbs(about 6 slices of bread) 3 eggs 2 Tbsps. minced onion 1 Tbsp. lemon juice 1/2 tsp. salt 1/4 tsp. pepper 1 (8 ounce) container sour cream
Prepare Tuna Loaf: Preaheat oven to 350 degrees. Grease well an 8 1/4 x 4 1/2 inch loaf pan. In large bowl, flake tuna; stir in bread crumbs, eggs, onion, lemon juice, salt, pepper and 1/2 cup of the sour cream until blended. Reserve remaining sour cream for egg sauce. Spoon into loaf pan. Bake for 45 minutes or until knife inserted in center comes out clean. While baking, prepare sauce.
Creamy Egg Sauce:
2 eggs 2 tbsps. butter or margarine 2 Tbsps. flour 1/2 tsp. salt 1/8 tsp. pepperbr>1 cup milk
Hard cook eggs; shell and cut into wedges. Melt butter in saucepan. Stir in flour, salt and pepper until well blended; continue cooking for 2 minutes, stirring constantly. Gradually stir in milk and cook until sauce is thickened and smooth, stirring constantly. Gently stir in hard cooked eggs and reserved sour cream. Heat through.
To serve, invert loaf onto warm platter; spoon sauce over top. Garnich with parsley. Makes 8 servings.

Clams Casino
2 dozen Cherrystone clams bacon, cut into 1 inch squares olive oil dry bread crumbs oregano
Shuck clams with a clam knife. Loosen clam from its shell. Place clam in one of the half shells; discard the other half. Place on cookie sheet. Spoon 1 tsp. bread crumbs onto each clam. Spoon 1 tsp. oil onto each clam. Sprinkle each with oregano. Top each with bacon pieces. Bake in 400 degree oven until bacon is crisp.

Salmon Party Log
1 (l lb.) can salmon 1 (8 ounce) pkg. cream cheese 1 Tbsp. lemon juice 2 tsps. grated onion 1 tsp. horseradish 1/4 tsp. salt 1/4 tsp. liquid smoke 1/2 cup chopped pecans 3 Tbsps. snipped parsley
Drain and flake salmon, removing skin and bones. Combine with next 6 ingredients and mix thoroughly. Chill for several hours. Shape into log and roll in parsley/nut mixture. Chill well again. |
