39. HOW TO MAKE MANGO LEATHER

Ingredients:

Mangoes ( table ripe )
Sugar

Materials:

Stainless steel knife
Stainless steel tray
Blender
Weighing scale

Procedure:

1. Wash mangoes to remove surface dirt.
2. Slice mangoes along its lateral axis from both sides of the middle seed section.
3. Scoop out flesh from peel. Scrape pulp form seeds.
4. Blend.
5. Weigh.
6. Add 4% sugar based on the weight of puree.
7. Pasteurize at 180 degrees celsius for 20 minutes.
8. Coat stainless steel trays with cooking oil.
9. Pour puree on trays.
10. Dry.
11. Remove mango leather from trays.
12. Cut into desired sizes.
13. Wrap.

40. HOW TO MAKE PEANUT BUTTER

Ingredients:

2 cups peanut ( roasted, shelled )
1 cup brown sugar
¼ bar dairy cream or 5 table spoon margarine
¼ cup corn oil or vegetable oil

Procedure:

1. Combine sugar and peanut. Grind.
2. Add dairy cream or margarine and grind again.
3. Add corn oil and mix very well.
4. Pour in a sterilized jar.
5. Process for 25 to 30 minutes.

41. HOW TO MAKE PEANUT BRITTLE

Ingredients:

¾ cup crushed, roasted peanut
1 cup white sugar
2 table spoon brown sugar
2 table spoon margarine
a pinch of salt or ¼ tea spoon baking soda

Procedure:

1. Caramelize sugar and salt
2. Add the peanut and margarine. Mix very well.
3. Pour in a table lined with banana leaves and flatten with a rolling pin or bottle.

42. HOW TO MAKE BANANA CHIPS

Ingredients:

Unripe banana, Cavendish variety
Sugar, white
Cooking oil

Procedure:
1. Wash, peel, slice thinly
2. Prepare syrup ( 1:1 = 1cup water to 1 cup sugar )
3. Fry until golden yellow
4. Soak in syrup for 3 minutes
5. Deep fry until golden brown
6. pack and seal
