Venison Stroganoff

Ingredients:

1-1/2 pounds venison round cut in thin strips
1/2 cup flour
1 tsp salt
1 tsp pepper
1/4 stil butter
1/2 pound fresh mushroms
1/2 cup sliced onion
1 clove garlic, minced
1/4 tsp dill weed
1/2 tsp paprika
2 cups beef bullion
1 cup sour cream

Preperation:

Roll the steak in a mixture of flour, salt, pepper, dill, and paprika.
Brown the butter in a loarge skillet,  Add the steak, mushrooms, onions, and garlic. 
Add bullion and let simmer for about 45 minutes.
Stir in sour cream (make sure the mixture does not come to a boil)

Sautee Apple Pie

Ingredients:

2 cups apples
2 Tbsp lemon juice
1/2 cup cinnamon-sugar
1 tsp cornstarch
1 graham cracker piecrust

Preperation:

In a small saute pan pour apples, lemon and sugar over medium flames.
When apples fold down (get tender and soft), add cornstarch and heat over low heat for three more minutes.
Pour into graham cracker crust and refrigerate for one hour.
Brown Sugar and Herb Bread

Ingredients:

1/4 cup dark brown sugar
1/4 cup granulated white sugar
1 egg
2 Tbsp olive oil
1 1/2 cups milk
1 tsp onion
1 tsp salt
2 tsp thyme
1/4 tsp white pepper
3 1/2 tsp baking powder
3 cups flour

Preperation:

Thoroughly mix egs, oil and sugars.
Mix dry ingredients together and add to egg mixture a little at a time, alternating with milk.
Pour into a well-greased 9X5 loaf pan let let stand for 20 minutes.
Bake at 350 degrees for 60-70 minutes or until toothpick incerted in center comes out clean.
Chicken Satay

Ingredients:

4 cloves garlic
1/4 cup orange juice
1 Tbsp fish sauce
(found in any ethnic gorcery or supermarket with international or gourmet isle)
1 Tbsp sugar
1 pound boneless chicken cut into finger size strips
(or beef, shrimp, pork)

The Sauce:

1/4 to 1/2 cup coconut milk
1 tsp lime juice
1 Tbsp sugar
2 tsp fish sauce
1/4 cup peanut butter
A little chicken stock or water

Preperation:

Combine the ingredients and marinate the   chicken for two hours or over night.
Skewer the marinated meat and grill for 2-3 minutes  on each side.
Conbine the sauce ingredients, whisk together and add a little stock or water to consistancy
(not too thick, not too thin)   Taste for sweetness.
Add a little more sugar, fish sauce, or lime juice to taste.
Serve the frilled skewers with the sauce and serve garnished with chopped cilantro or scallions and crushed peanuts if desired.
TIP: If you are making a lot of these for a party, marinate them skewred in a baking dish, bake the whole dish at 350 dregrees for a while and finish cooking on the grill.
