Dear DUHS: The recommended daily dose of 60 mg.s of Vitamin C is antiquated idiocy. WE are the only animal on Earth that doesnt produce its own Vitamin C. If the body doesnt need it, it passes out via urine, changing its color, or burns, when it does, allowing you to lessen the amount being taken. So its pretty difficult to do too much of it, besides its non-toxic. Heat or light destroys it*, so vegetables cooked with it in them, duh, will have less than what is stated for them raw.  So take supplements and insure your body needs, including possibly your brain.

Think of the pollutions we live in, zillions of them and combinations, you need that Vitamin C.  I smoke, and occasionally alcohol, both of which wipe out the Vitamin C. Scientists have documented that a 1000 mg.s a day will REMOVE LEAD FROM YOUR BODY SYSTEM, but what about all those other irritants running on the race track of your blood? I have taken, from 3000 mg.s a day to sometimes thousands more, no problem. I never get the flu, if you do, enjoy it, you deserve it for being so dumb.

Primary Vitamin A from meat, or Beta Carotene from vegetable sources, another must. Beta carotene the safest, since, once again the body throws it out, if it doesnt need it. Eat those carrots, grated or steamed, to maximize your getting the benefit, plus their excellent fiber. I eat five to ten pounds a week ( in spite of having discovered they are growing in the fields treated  with Methyl Bromide, and being roots, no doubt absorb same, possibly canceling out some of their their benefit. However, in some cases heat destroys such, but is this one of those cases?) Welll, I used to, but now I´m eating lutein type greens.  Raw carrot juice?, delicious, but for sissies, such as those found on the coastal areas of California, therefore, I sneak in a health store occasionally and drink such clandestinely. Carrots are cheap to purchase, compared to other vegetable sources. Steamed, in a bit of water, in a pan with a tight fitting lid, lets their natural sweetness accent any meal. Those steamers, folks buy are a ridiculous unnecessary expenditure. Toss in a tsp. of Cranraisins, to help your kidney and liver function, besides that, scientists have found that molecules in cranberries, attach to viriuses and excrete them out of the body. More anti flu protection.

IN THE USA WEEKEND SUNDAY NEWSPAPER SUPPLEMENT of May 3-5,2002, THERE WAS AN IMPORTANT ARTICLE ON LUTEIN, found the most in Kale greens, 1/2 cup yields 10 mg. IT HAS BEEN DOCUMENTED TO PREVENT CANCER(that is besides SULFARAPHONE in the Cabbage family: Kale, Cabbage, Mustard Greens, Brussels Sprouts, Pak Choi, Napa Chinese Cabbage, Collards, Turnips etc., that does the same thing). Kale has been voted by U.S. national nutritionists as the most nutritious vegetable! I am chopping it up really fine raw, and putting it in my morning cereal (well, I would if I ate cereal), its basically tasteless in that form. In the same condition, it could be added to any baked substance such as bread, bisquits, how about muffins? Lutein saves eyes from macular degeneration.  It prevents clogged arteries. It combats arthritis. It strengthens the lungs. It prevents cancer. One can get away with only a few servings a week, but why?, eat it daily! PASS IT ON, LUTEIN IN KALE* CAN SAVE LIVES! J.B. (*also found in lessor amounts in Collards 1/2 cup 7 mg.s, whose upper leaves can be sliced very thin with a cerrated knife, 1/8 inch strips, which in a salad or even in a sandwich, will provide you with 7 mg.s per one half cup (and Spinach, however, Spinach contains oxalic acid which can negate certain minerals in the body...Recently, in conversation with a Black citizen, I told him I was eating raw Collard greens, and he said he never heard of anyone doing that. I use a cerrated knife, slicing extremely thin the upper part of the leaves. These can be used in salads or diced then mixed with olive oil and Spike** seasoning and other greens for a robust salad. I roll that up in a flour tortilla--Superb!

Don't tell any Mexicans about this, the last thing we need is them any healthier than they are. The Beta Carotene, they get in their traditional diet is remarkable! J.B.

**Spike seasoning available at most Albertson supermarkets (or health stores), a superb blend of bio flavenoids, a heart helper and cancer preventer. Here in El Cenro, Ca., its only $2.49, a real bargain, forget those other seasoning rip offs, this the one!

Recently, I poured into a salad dressing jar 1/3 Rice vinegar, 1/3 Olive oil, and about a heaping tablespoon of Spikes seasoning and an equal amount of granulated Kelp seaweed, filling the rest with water, shaking to mix. After the first shock of seaweed taste, its really quite addictive. I'm eating it at every meal possible. (8,18,02, I have abandoned the above Kelp approach, instead, when I buy a new bottle of Spike, I mix in one quarter of the volume of its fullness of bottle with granulated kelp.  Its a lot easier, as a garnish or cooking seasoning.  I would think a food engineer could come up with a Snappy Tom type product with a heavy use of kelp that tasted good. I live outside, such experimentation is impossible.)

It is said that Kelp contains every mineral we need, except one found in cucumbers, or the melon family.

6/29/02: ONE OF THE WORST PRODUCTS ON THE AMERICAN SCENE IS QUAKERS INSTANT OAT CEREAL. The (WHY AMERICAN FOOD PRODUCERS DONT USE STEVIA AS A SWEETNER, IS BEYOUND ME, MORE CORPORATE STUPIDITY< I SUPPOSE) the sugar Quaker Instant Oats   contains is enough to gag livestock. Did you know that all oats sold in stores, is blanched, including, I am informed, Organic. Its to lengthen the shelf life. What I fear is, it might have pesticides applied, to deter insects such as weevils, poisening us too! Forget Cheerios, they´re for Sailors and little kids. Save money, just use oats with milk or not, bit of sweetner (such as Stevia favored by Japanese, its delicious. Eaten dry, oats tastes similar to peanuts. Granola products are another big racket. Toast oats on the top of the stove in a pan like the Mexicans do to make pinole, stirring in a bit of olive oil just as you remove from heat. If you really want to save money, buy 50# bags of oats at the nearest feedstore. Be sure to question how those are treated.

Recently, I heard scientists have documented that eating  Broccoli cures stomach acid problems, especially, we oldsters have. Its also low carbohydrate, good dieting dish. It has very little lutein, only a one mg. per cup. J.B.

TWO:7/21/02: We all sneak in and fast food, its so easy! But I have had problems with occasional stomach ache and diarrhea, so I carry Imodium ID tablets (also 500 mg.s of Vitamin C, taken after such meals can prevent such problems)  all the time. This has happened lately with Jack In The Box burgers...as it has in the past. Wendy's has a 99 cent special of Chips, Chili and Cheese dish I adore, but last week, later at Oceanside Computer lab, it developed fassst. Today, finally, I went to Wendys 3-30, 1002 Mission Avenue, Oceanside, Ca. 92054, and asked to speak to the mgr.(about 1:30 pm), who listened as I said, I knew "that chili an often offender, especially if its not kept heated at a constant (at least) 160 degrees+. He said, "Yeah, Yeah," and stalked off! Well Howdy Doody, next time, I'll email San Diego Health Dept and go to doctor and find a lawyer and sue the ungrateful dogs. A few months ago, I reported to the SDHealth (lbuenahe@co.san-diego.ca.us) Dept. about two Carl's Jr. experiences, neither Carl's Jr. responded or the health dept. Not even for a fungus in the bathroom problem at an Escondido, Ca. Motel 6. I suppose people have to die first.

Recently, at a Vista, Ca. Sante Fe St., MCDONALDS, I spent $5.90 for a little fish sandwich, supersizing the combo drink for 99 cents and the French fries, I ASKED IF THEY GAVE SENIOR DISCOUNTS* WHICH I THINK IS OUTRAGIOUS! (*They do have a Senior cold drink in a TINY cup...WHY IS McDONALDS SO CHEAP?! On the way out, a mgr. type came throgh the front door carrying McDonald drink cups, he dropped a row of them on the floor, I didnt hear him say throw them away, because he dropped them on the floor. I, sitting outside got part of his license number, from his white new pickup, something like 6777222, Ca. License plates. I will alert McDonalds headquarters. / I just went to their website and tried to send them a message to come to this site, I WAS FORCED TO CHECKMARK A BOX THAT I DIDNT WANT THEM TO RESPOND--OUR NAZI MCDONALDS PLUS I COULDNT MAKE A COPY OF THAT FORM! (When I first tried to state the latter, the template system stopped me.

On Sept. 26, I went to a Burger King outlet in Oceanside, Ca., and ordered their Veggie Burger, its terrible! Tastes like regurgitated leftover squash remmants, molded into a too thin patty, deep fried. I CAN SAVE THIS DISASTER. SERVE THIS PATTY WITH SHREDDED LETTUCE, SLICES OF TOMATO SITTING ON DICED BLACK OLIVES, PLAIN YOGURT ON BUN (Oddly enough it will remind one of mayonaise) AND USE ON TOP OF THE SHREDDED LETTUCE, A SWEET TERIYAKI DRESSING. FROM DISASTER TO SUCCESS, WILL BURGER KING LISTEN?, OF COURSE NOT, BURGERS ARE THEIR MAIN PRODUCT.

(*Consider the lowly dandelion, that curse of manicured lawns, with its bright yellow flowers, on cerrated leaf clumps, all of it can be consumed, high in vitamins, go into a search engine, looking for info on it, it will amaze you!)

SEPT. 28, 02: For the last two months, I have eaten daily, a steaming of diced kale, generally two cups,(aprox. 40 mgs of lutein) along with cloves(the little parts of a bulb) of garlic. I started doing one a day, adding another in a couple of days, because if you dont do it slowly, you get a headache, from the constriction of blood vessels. I am now eating 5 to 15 cloves daily in this dish. To this, I add a half teaspoon of Spike seasoning, spraying in a little olive oil as I remove from the heat the dish and thats my breakfast. I noted my eyes improved measurably.

This last month, in my homeless pint to a quart of water, I use to bath with using a rough type washcloth, before that, I put in two tea bags of regular pekoe tea and besides that, one of green tea, letting them steep in the room temperature water, coloring the water a pale amber AND!, recently, I noticed that over half of the melanomic spots on my arms have vanished. I have had these for years, always worrying a bit. The skin is an organ, we take for granted. Scientists have documented it will absorb vitamins such as A or C, why not the anti radicals of pekoe teas? On other occasions, using an analgesic called ICE, I have seen temporary aiding of the problem, it seems to merely dry the spots up. But this green tea method, produces clear skin. I wash with it and dont rinse...of course, it could be a combination of the kale dish breakfast and the green tea, tell any you know, to try it and let others know the results...Jerry E. Barta, Poet-Gardener. OH YEAH, I forgot, I USE AN ANTI-BACTERIAL LIQUID SOAP AS WELL IN THIS SOLUTION, HAS TO HAVE TRICLOSAN as main ingrediant.

ONE OF THE WORST FAST FOOD PLACES YOU CAN EAT AT, IS LONG JOHN SILVERS FISH PLACES. DRUDGED IN SALT, AND GREASE, FRIED TO CRISP UGLINESS< THEY FURTHER INSULT YOU WITH THE WORST TARTAR SAUCE KNOWN TO HELL> TRY THIS INSTEAD, 1/2 cup mayonaise, mix in 1/4 cup plain yoghurt, dash of lemon zest (zest is simply grating a bit of residue from the outer layer or peeling), zest of dill pickle and onion, I suggested to their headquarters they use this, but they dont give a damn, THEY ALREADY HAVE YOU HOOKED!
