Beet Relish
A side dish
12 cups shredded beets
1 lb. brown sugar
1 cup boiling water
1/4 cup flour
1 teaspoon salt
1 pint vinegar
2 teaspoons dry mustard

Cook beets and shred.  Make a paste of cold vinegar, flour and sugar, salt and mustard.  Pour over this the boiling water, stirring constantly.  Pour over shredded beets, bring to a boil.  Pour into hot sterilized jars and seal.
