| 1 1/4 cups bran 1 cup milk 1 egg 1/2 brown sugar 1/3 cup oil 1/3 cup fancy molasses 1 1/4 cup flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1/2 cup raisins (optional) |

| Grease muffin tins and preheat oven to 350F. Mix the bran with the milk. Let stand while beating together the egg, brown sugar, oil and molasses. Combine with the bran mixture. Sift the dry ingredients, then quickly stir into bran mixture. Add the raisins; do not overmix. Fill tins 3/4 full. Bake for 20 minutes. Yield: 12 medium muffins |
