Oatmeal Muffins
1 1/2 cups oatmeal
1 1/2 cups buttermilk or sour milk
1 1/2 cups flour
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1 tsp. salt
3/4 cup oil
3/4 cup brown sugar
2 eggs
Combine oats and buttermilk.  Let stand.  In another bowl mix flour, baking powder, baking soda, and salt. Add oil, brown sugar and beaten egg to oat mixture, mix well.  Stir in dry ingredients, mixing only long enough to moisten.  Spoon into greased muffin tins and bake at 400F for 15-20 min.

Yield: 12 large muffins

Optional: add 1/2 cup raisins
