Stuffed Pizza Sticks- Submitted by Christi
1 tbsp. cornmeal,
2 pkgs. refrigerated pizza crusts,
2 tsp. Olive oil (divided),
1 tsp. basil,
1 tsp. oregano,
1/4 tsp. garlic salt,
1 cup shredded mozzarella cheese,
2 tbsp. Parmesan cheese,
8 oz. pizza sauce
Preheat oven to 425 degrees. Sprinkle cornmeal evenly over baking stone, or cookie sheet. Unroll one crust onto stone or cookie sheet. Brush with 1 tsp. olive oil, using pastry brush. Sprinkle crust with mozzarella, place other pizza crust on top. Press edges to seal the crusts together. Cut dough in half, and then lengthwise in to 10 1 inch strips with pizza cutter. Do not separate, brush with remaining oil. Sprinkle with the spices and parmesan. Bake for 14-16 minutes. Use pizza cutter to separate strips. Serve with warm pizza sauce.
Pepperoni Bites- Submitted by Christi
1 cup shredded mozzarella cheese,
1/2 cup chopped or sliced pepperoni,
1/2 cup pizza sauce,
2 pkgs. can biscuits,
1 tbsp. milk,
parmesan cheese
For filling:
Using a pastry brush, brush with milk and sprinkle on parmesan cheese. Bake at 350 for 12-15 minutes or until golden brown.
Chicken and Rice Casserole- Submitted by Christi
4 boneless chicken breasts,
1 large can cream of chicken soup,
4 boxes of Rice a Roni, Chicken flavor,
6 oz of sour cream
Boil Chicken until tender. Drain and cut into cubes. Cook rice according to box directions. In a mixing bowl, mix sour cream and cream of chicken soup. Layer into a large baking dish with sour cream mixture, rice, and chicken until ingredients are gone. Make sour cream mixture the top layer. Bake at 350 until hot.
Family Style Meatloaf- Submitted by Christi
1 1/2 lb. ground beef,
1 cup bread crumbs,
1/2 cup green pepper (chopped),
1/2 tsp. pepper,
1/2 cup onion (chopped),
1 egg beaten,
1/2 tsp. salt,
1 tbs. chili powder,
1/2 cup spaghetti sauce
Combine all ingredients, shape into baking dish lined with foil. Spread spaghetti sauce over the top of meatloaf mixture. Bake at 350 degrees until meat is done.
Easy Chicken and Dumplings- Submitted by Christi
1 whole chicken (cut up),
3 cans refrigerated biscuits,
salt and pepper,
Flour
Put chicken pieces into crock pot filled with water. Turn crockpot on, cook on high until chicken is tender. Remove chicken from water (DO NOT pour out the broth!) and debone. In crockpot, add small amounts of flour until the broth thickens up. Add chicken pieces back to broth in crockpot. Pull apart biscuits and roll into small balls, drop into broth and chicken mixture. Cook chicken and dumplings until dumplings are the right consistency. Salt and pepper to taste.
Macaroni Stew- Submitted by Christi
1 lb. ground beef,
1 can spaghetti sauce,
1 pkg. elbow macaroni,
1 can mixed veggies (drained)
Brown ground beef and drain. Cook macaroni and drain. In a large saucepan, mix beef, macaroni, mixed veggies, and sauce. Cook on low for 20 minutes or until all ingredients are hot.
Tuna Treasure Boats- Submitted by Christi
1 can tuna,
1/4 c. Pickle relish,
1/4 c. Mayonnaise,
4 unsliced hot dog buns,
2 slices American Cheese,
Pretzel Sticks
Mix tuna, pickle relish and mayonnaise. Hollow out center of buns.
Spoon tuna filling in hollow of buns. Cut cheese diagonally, then fit each triangle of cheese on a pretzel stick to make a sail.
Stick sail into tuna-filled boats.
Hot Dog Wraps- Submitted by Christi
4 hot dogs,
8 toothpicks,
4 slices of bacon,
4 slices of American Cheese
Carefully make a cut down the hot dog--but don't cut all the way through! Cut the cheese to fit into the slit in the hot dog. Wrap the bacon around it to hold in the cheese. Hold the bacon secure at each end with a toothpick.
Bake in 400' oven until the bacon is crisp.
Variation- instead of bacon wrap the hot dog and cheese in a prepared crescent roll triangle. Bake until the crescent roll is browned.
Breakfast Burrito- Submitted by Christi
1 flour tortilla, heated according to package directions,
1 egg, scrambled,
1 tablespoon prepared salsa,
1 tablespoon greated cheese
Lay warm tortilla on a dinner plate. Spread the cooked egg in the middle. Spoon the salsa on top of the egg. Sprinkle with cheese. Fold one side of the tortilla over the egg, then roll up.
Layered Chicken Enchiladas- Submitted by Christi
8 (6-inch) corn tortillas,
2 cups (8 oz.) shredded Monterey Jack cheese,
1 cup shredded cooked chicken,
1 (4.5 oz.) can chopped green chilies,
1/4 cup minced onion,
1 (10 oz.) can green chili enchilada sauce
Heat oven to 350 degrees F. To make a layered enchilada, place one tortilla on lightly greased or sprayed baking sheet. Sprinkle with 1/4 cup cheese, 1/ cup chicken, 1 Tbsp. green chilies, and 1 Tbsp. onion. Top with a second tortilla; pour 1/3 cup enchilada sauce over stack. Sprinkle with another 1/4 cup cheese. Repeat with remaining tortillas, which will make 3 more stacks. Bake 15 minutes, or until bubbling and hot. Serves 8.

soft tortilla shells,
3 boneless skinless chicken breasts,
1 lb bacon,
1 tomato,
lettuce,
6 oz. cheddar cheese,
1 bottle ranch dressing
A great change from sandwiches, and they're great in lunches and also for
dinners on warm nights, as they're served cold. Cook the chicken and cut into
small pieces. Cook bacon till crisp and crumble. Chop tomato small, and shred
some lettuce, and the cheese. Mix all together in a bowl and add ranch
dressing. Spoon some of mixture onto tortilla shell and roll up. Makes about
12 of the smaller sized shells.
Cheesy Mostacioli- Submitted by Christi
1 pkg. Mostacioli pasta - cooked,
1 1/2 lbs. browned ground beef,
1 can cheddar cheese soup,
1 jar spaghetti sauce,
1 tsp black pepper,
3 cups mozzarella cheese,
1 tsp. itailan seasoning
Preheat oven to 400 degrees. Combine pasta, meat, soup and spaghetti sauce. Add pepper and seasoning and 2 cups of the mozz. cheese. Mix to combine. Place in a baking dish and sprinkle remaining cheese on top. Bake 25-30 min.
Baked Potato Soup- Submitted by Patrisha
4 baking potatoes,
2/3 cup butter,
2/3 cup all-purpose flour,
6 cups milk,
1 cup chopped green onions,
3/4 teaspoon salt,
1/2 teaspoon ground black pepper,
12 slices bacon,
5 ounces shredded Cheddar cheese,
1 (8 ounce) container sour cream
Bake potatoes 1 hour in a 400 degree F (200 degree C) oven. Scoop out the
inside of the potatoes and set aside. Reserve the skins for another recipe or
discard.
Melt the butter in a large skillet over medium low heat. Stir in the flour to make a roux. Cook about 1 minute, stirring constantly. Gradually pour in the milk while stirring until all the milk has been added. Bring heat to
medium and keep stirring until the soup mixture starts to get thick.
Add the potatoes, green onions, salt, ground black pepper, bacon and
cheese. Stir well and continue to heat for about 15 minutes, allowing the
flavors to blend. Stirring well, mix in the sour cream until well blended
with the soup. Serve immediately.
Makes 4 servings
Lasagna- Submitted by Patrisha
2 lbs. Ground meat,
1/2 package egg noodles,
2 cans tomato sauce,
1 small can tomato paste,
1 dash Worchershestershire (sp.?) sauce,
1 12 oz. Package cottage cheese,
1 package shredded mozzarella cheese,
1 cup grated cheese
Brown meat. Drain off grease & return to skillet. Pour tomato sauce,
tomato paste & W. Sauce over meat. Simmer for 30 minutes. Cook noodles.
In greased casserole, place in layers 1/2 of meat mixture, cottage cheese,
noodles, mozzarella cheese, grated cheese, 1 rest of meat mixture. Bake at
375 until bubbly in the middle, (about 20 - 30 minutes).
You can assemble everything & refrigerate over night, then bake the next
day. Also, for really good & easy garlic bread I use McCormick's Garlic Bread
Sprinkle. It has garlic powder, Parmesan cheese & sesame seeds in it. So
you just butter the bread & sprinkle that stuff on generously. Very tasty.
Makes good croutons, too.
Pizza Pops- Submitted by Sandy
Need: for 8 pizza pops:
One 8oz. can of refrigerated
crescent roll dough, 1 small jar of pizza sauce,
shredded pizza cheese, such as mozzarella
Utensils & supplies: 8 Popsicle sticks or craft
sticks, 1 baking sheet teaspoon, toaster oven or
conventional oven
Remove the dough from the can & separate
into triangles. Let children spread a little bit sauce
onto each dough triangle, then sprinkle w/cheese.
Place a craft stick along the widest side of each
piece of dough, & lightly roll the pizza around the
stick to enclose it. Make sure the dough is sealed &
no sauce or cheese is showing! Bake the pizzas
according to the directions on the crescent roll pkg.
Let the pizza pops cool slightly before eating. If
desired, dip the pizza pops in extra sauce. Enjoy
these portable pizza pops!
Banana Hot Dog Sandwich- Submitted by Christi
1 Hot dog bun,
1/2 Banana,
2 tablespoons Peanut Butter
Toast hot dog bun. Spread peanut butter
on hot dog bun. Add banana.
Corn dog Muffins- Submitted by Christi
2 pkgs. cornbread muffin mix(8 1/2 oz. each),
2 TBL brown sugar,
2 eggs,
1 cup milk,
1 can(11 oz) whole kernel corn,
5 hot dogs chopped
Combine the corn bread mix and the brown sugar. Add the eggs and the
milk. Stir until moistened. Stir in the corn and the
hotdogs. The batter will be thin. Pour into muffin papers and
bake at 400 degrees for 14-18 minutes or until golden brown. Serve
while warm or refrigerate.
In a mixing bowl, combine mozzarella, pepperoni, and pizza sauce. Set aside until later. Separate biscuits, flattening them into 3 inch circles. Place 1 rounded tbsp. of filling into the center of each biscuit. Bring edges of dough together, and pinch to seal. Place seam side down, on greased baking sheet.
