baked apples

this dessert is simple to make for an after dinner treat or is delicious for breakfast on a chilly morning. serve with a glass of cold vanilla soy milk or hot english breakfast tea.


ingredients

  • 6 firm baking apples, cored
  • 1/2 cup dark brown sugar
  • 4 tablespoons unsalted butter cut into 6 equal bits
  • 1/2 cup apple cider
  • 2 tablespoons cornsyrup
  • 2 tablespoons chopped dried cherries
  • 2 tablespoons chopped dried figs
  • 2 tablespoons chopped crasins
  • 2 tablespoons chopped toasted almonds
  • 2 tablespoons chopped toasted pecans


  • directions

  • preheat oven to 400 degrees
  • mix together sugar, fruit and nuts in a small bowl
  • put the apples in a shallow baking pan and stuff them with the mixture
  • place a pat of butter atop each of the apples stuffing
  • pour apple cider and cornsyrup into the pan
  • bake apples for 25-30 minutes basting every 5 minutes
  • transfer apples to a serving plate and cover to keep warm
  • pour juices left in the baking pan into a sauce pan and bring to a boil over medium heat
  • simmer until juices reduce and form a syrup, about 5-10 minutes
  • pour syrup over apples and serve
