baked apples
this dessert is simple to make for an after dinner treat or is delicious for breakfast on a chilly morning. serve with a glass of cold vanilla soy
milk or hot english breakfast tea.
ingredients
6 firm baking apples, cored
1/2 cup dark brown sugar
4 tablespoons unsalted butter cut into 6 equal bits
1/2 cup apple cider
2 tablespoons cornsyrup
2 tablespoons chopped dried cherries
2 tablespoons chopped dried figs
2 tablespoons chopped crasins
2 tablespoons chopped toasted almonds
2 tablespoons chopped toasted pecans
directions
preheat oven to 400 degrees
mix together sugar, fruit and nuts in a small bowl
put the apples in a shallow baking pan and stuff them with the mixture
place a pat of butter atop each of the apples stuffing
pour apple cider and cornsyrup into the pan
bake apples for 25-30 minutes basting every 5 minutes
transfer apples to a serving plate and cover to keep warm
pour juices left in the baking pan into a sauce pan and bring to a boil over medium heat
simmer until juices reduce and form a syrup, about 5-10 minutes
pour syrup over apples and serve
