jello pop: rainbow popcorn with rachel and kate


kate and i have been bestfriends since we met in the early 80's as todlers. we had the hippest little playgroup in poway and as soon as we were old enough to know the difference between flour, sugar and baking powder we were coming up with crazy (and sometimes delicious) concoctions in the kitchen.

just like the happy chai, rainbow popcorn is fun to make in bulk so you can package it up and share it with friends. it is definitely a recipie that requires more than one set of hands so grab your bestfriend and get ready for some sugary fun!

ingredients

  • 10 cups popped popcorn
  • 1 cup butter
  • 3/4 cup sugar
  • 1 3oz package of gelitan
  • 3 tablespoons water
  • 1 tablespoon cornsyrup


  • tools

  • candy thermometer
  • baking sheet or shallow casserole dish (12x18x4 or larger)
  • medium sized saucepan
  • heat tolerant spoon to stir with (no cheap plastic ones)
  • wax paper
  • zipper seal bags


  • how to

  • pre heat oven to 300 degrees
  • lightly grease baking sheet and fill with popped corn
  • combine butter, sugar, gelitan, water and cornsyrup in a saucepan over medium heat
  • constantly stir mmixture until it boils and reaches 255 degrees or hard ball stage
  • poor mixture over popcorn and carefully stir until coated
  • bake for five minuets
  • remove pan from oven, stir popcorn and then return to oven to bake for an additional five minuets
  • when finished immediatley dump popcorn onto a table covered in wax paper to let cool and harden for at least five minuets
  • repeat process for as many colors/flavors as desired
  • when all batches are finished organize colors in small zipper bags to make a rainbow collection of sugary popcorn
