St. Patricks Day Corned Beef/Cabbage

4-5 lb. lean corned beef brisket | 4 cups water |
6-8 red potatoes (cut into 1/2) | 12 carrots (cut into 1/2) |
1 onion (cut into 1/8's) | 1 green cabbage (cut into 8 wedges) |
Put beef into crock-pot and cover with water. Cook on low all night (8-10 hours). In the morning, turn off and remove lid. Let the corned beef cool while you do vegetables. Add vegetables to pot (on top of meat). Cover with the lid and turn onto low again. Cook for 6 to 8 hours or until the vegetables are tender. Then add green cabbage. Put some of the juices over the wedges and cover the pot. (If it won't all fit then remove the potatoes and put them into a bowl, you can reheat them in the micro or crock-pot later.) Cook the cabbage wedges about an hour to 1 1/2 hours. Serve the meat/vegetables/cabbage with pickled beets and rolls and butter.
If you want green beer to go with it on St. Patty's day; put a little green food color into a glass pitcher and then pour 4-5 cans of beer into the pitcher. Serves 6-8.

3 Cups Coconut | 2 Squares Sweetened Chocolate (melted) |
Melt butter in sauce pan, remove from heat, add powdered sugar and coconut mix. Shape into small rounded balls, indent center and fill with melted chocolate. Store in the fridge. Makes Approx. 3 dozen.

½ Tsp. Nutmeg | ½ Tsp. Allspice |
1/3 Cup Canned Milk | 1 ½ Cups Nut Halves |
½ Tsp. Vanilla | * |
Combine sugar, cinnamon, nutmeg, allspice, and milk in sauce pan, cook until sugar dissolves. Boil syrup slowly until a soft ball forms in icy cold water. Add nuts and vanilla stirring, stirring until very thick. Drop on wax paper and let cool.

Cook to sugar, milk, syrup, and cocoa to a soft ball stage. Add Vanilla, a little butter, and nuts. Stir well. Pour into buttered pan and let cool.
