GEFILTE FISH PATÉ            

*	Ingredients Needed:


*	1 large onion, diced medium
*	3 tablespoons oil
*	1 1/2 pounds white fish, ground
*	1 1/2 pounds pike, ground
*	4 eggs
*	2 cups cold water
*	7 tablespoons matzah meal
*	1 tablespoon salt
*	1 teaspoon white pepper
*	2 tablespoons sugar
*	2 carrots, grated

 
Directions: 

In a small sauté pan sauté the onions in oil until translucent.  Set aside and allow to cool. 

In an electric mixer with the paddle attachment, place the ground fish.  Add the cooked onions, eggs, water, matzah meal, salt, pepper and sugar.  Mix at low speed until all ingredients are evenly combined.  Scrape the sides of the bowl with a rubber spatula to ensure uniformity.  Unhook the bowl from the machine and use the rubber spatula to fold in the grated carrots.  Pour mix into a greased loaf pan mould.  Bake in a pre-heated 325F oven, in a water bath for approximately 1 hour.  Cover with aluminum foil and bake 1 hour more. 

Remove from oven and allow to cool, then refrigerate.  Serve chilled with horseradish and a carrot salad, field greens or an assortment of vegetables.
