Stuffed French Toast
 
4 one inch slices of fresh French bread
2 eggs
3 tablespoons milk or 1/2 and 1/2
1 tablespoon sugar
1/2 teaspoon almond extract

Stuffing:

4 tablespoons of cream cheese or marscapone
2 tablespoons of strawberry preserves
1/2 teaspoon almond extract
1 tablespoon sugar

Margarine to fry in.
Powdered sugar to dust with.

Directions:
Mix cream cheese, strawberry, almond extract and sugar in a bowl.
Make a sandwich out of two pieces of bread with the cream cheese mixture in the middle.
Mix eggs, almond extract, milk and sugar well in a bowl. Dip the French bread sandwich in the egg mixture, coating well.
Fry coated sandwiches until lightly browned on both sides. Turn sandwiches up on crust ends and lightly brown crusts also. Put into 200 degree oven for 1/2 hour to finish. These hold well for up to an hour with foil on top. Also great served cold.
Sprinkle on powdered sugar as desired. Top with 100% maple syrup.
