1 Pound (4 sticks) butter, softened
4 Cups sugar
8 eggs
8 teaspoons coconut extract
4 cups sour cream
1 1-pound bag shredded coconut (4 cups)
8 cups all-purpose flour
4 teaspoons baking powder
4 teaspoons baking soda
Cream together butter and sugar. Beat in eggs and extract, then sour cream. Add the coconut. Stir together the flour, baking soda and baking powder and beat into the batter. Divide between 4 lightly greased loaf pans and bake at 350 degrees for about 45 minutes, or until bread tests clean ( a toothpick inserted in the center comes out without any clinging batter or wet crumbs). Makes 4 loaves.
