Conch Fritters

 


This is a great island appetizer or sunset snack.

1 lb conch, finely ground
1 large green pepper, very finely chopped
1 large ripe tomato,very finely chopped
1 large onion,very finely chopped
2 eggs, well beaten
1 tsp salt
dash of ground pepper
tabasco or hot sauce to taste
1 1/4 cup flour or enough to bind the fritters
Cracker crumbs or plain bread crumbs
Limes, quartered
Cocktail sauce


Mix in a bowl conch, green pepper, tomato, onion, eggs, and flour. Add seasoning to taste. Form fritters into 1 -2 inches in size. roll in crumbs. In a heavy sauce pan or deep fryer heat oil to 350 degrees. Fry fritters 3-5 minutes or until golden brown. Serve fritters with Limes, cocktail sauce and hot sauce on the side.
