Plain Yogurt
It's simple and economical to make yogurt. To illustrate, at this time, milk costs $2.66/2 litres, yogurt costs $1.99/0.5 litre, and yogurt culture costs $2.19. If a family consumes 1 litre of yogurt per week, the family will spend $15.92 on commercial yogurt. If the family makes their yogurt, they will spend $7.51 on yogurt. Furthermore, yogurt made at home does not contain any additives or preservatives.
1 litre or quart milk
10 g (.33 oz) yogurt culture
Heat milk in saucepan just until hot (do not boil). Let cool to lukewarm. Add culture and mix well. Pour mixture into sterilized containers. Let sit in a warm place until milk has curdled. Store yogurt in refrigerator. Reserve 3 tablespoons of the yogurt to use for culture next time.
Variation
For firmer yogurt, add 1 teaspoon gelatin, mixed in some water, and 3 tablespoons instant milk powder to milk prior to heating.
Non-Instant Skim Milk Powder
Non-instant skim milk powder is not readily available in most supermarkets, but it is readily available in bulk food stores.
Non-instant skim milk powder has the consistency of cornstarch, whereas instant skim milk powder has the consistency of instant coffee granules. Non®instant skim milk powder is more inexpensive than instant skim milk powder and it is more convenient to store.
Babies and toddlers require whole milk. However, to extend your milk, serve older children and adults milk "made" by mixing equal quantities of mixed, no-®instant skim milk and whole milk. To extend your milk even further, use mixed no-®instant skim milk when you are cooking.
Mixed Non-Instant Skim Milk Powder
To 32 fl. oz. of water, add 1/2 cup of powder; stir vigorously for 15-20 seconds. Mixes best in a blender.
Make apples and oranges into candle holders. If the fruit does not sit flat, trim the bottom of the fruit. With an apple corer or knife, make a hole large enough for a taper candle or votive candle in the top of an apple or orange.
Time-Saving Tips
Cook a large quantity of beans and freeze them as separate portions, the size you will need.
Cooked beans such as rice, barley and millet will last for days covered in the fridge.
Many soups and main courses can be made ahead of time and frozen.
Homemade Lip Balm
1 tablespoon beeswax
1 tablespoon vegetable oil
Melt wax in a custard cup placed in a shallow pan of boiling water. Stir in oil. Pour into a small container.
Peel oranges in one long strip and hang to dry. When dried,utilize the peels as kindling wood. The fragrant peels will easily catch fire.
